4 larges Baking potatoes
2 cups Kosher salt
2 cups Plain yogurt
2 Scallions
1 tablespoon Olive oil

How to Prepare the Potatoes:

1. Preheat the oven to 350 F.

2. Place the kosher salt evenly on a baking sheet.

3. Place the potatoes on top of the salt and bake until tender, approximately 45-50 minutes.

How to Prepare the Topping:

1. Preheat a grill pan or broiler.

2. Brush the scallions with olive oil and salt and pepper to taste.

3. Grill on each side for 2 minutes and chop coarsely.

4. Place the yogurt in a strainer lined with cheesecloth over a bowl.

5. Let sit 30 minutes. Place the drained yogurt in a bowl, add the grilled scallions and season with salt and pepper.

6. Serve over potatoes.
