Sausage broccoli minestrone soup

Ingredients

Quantity Ingredient
3 tablespoons To 4 tb Olive Oil
1 pounds Gourmet Sausage (or Chicken Sausage, casing removed)
2 cups Onion, coarsely chopped
1 Clove Garlic, minced
8 cups Water ( or defatted chicken stock)
1 teaspoon To 2 ts Salt (optional)
Freshly Ground Pepper
2 To 3 Fresh Basil Leaves
1 pinch Dried Hot Pepper Flakes
1 bunch Fresh Broccoli, trimmed and cut into small pieces
3 cups Potatoes, diced
½ cup Italian Parsley

Directions

In a large pot add olive oil and set over medium heat. Add sausage and onion and saute' until meat is brown ( about 5 minutes). Add garlic and saute' 1 minute. Add water or stock, salt, black pepper, basil, and pepper flakes. Bring to boil. Cover and simmer about 20 minutes.

Add broccoli, potatoes, and parsley and simmer until potatoes are tender. Serves 8
