1 | Plump fresh garlic clove; peeled and halved | |
1 | large | Ripe tomato; halved crosswise |
12 | Anchovy fillets in olive oil; drained |
Directions
Grill the bread, and while it is still hot rub one side of each slice with the halved garlic, beginning at the crusty edge and then moving over the rest of the toast. Literally "scrub" the toast with the tomato - cut side towards the bread - rubbing until each slice fully absorbs the tomato juice and the seeds coat the bread.
Place 2 anchovy fillets on each slice and serve immediately. The bread should be dripping with the juicy whiteness of the tomatoes.
Serve as an appetiser or quick snack.
