Seitan fusion saute

Ingredients

8 | ounces | Seitan; finely chopped or |

2 | cups | Shredded zucchini |
1 | cup | Chopped fresh tomato |
½ | can | Crushed pineapple in juice; undrained (20 ounce |

2 | tablespoons | Peanut butter |
½ | cup | Lite coconut milk |
Salt and pepper to taste | ||
¼ | cup | Chopped fresh cilantro |
1 | dash | Tabasco (optional) |
Chopped peanuts for garnish (optional) |
Directions
Heat the oil in a large skillet. Add the onion and sauté for 5 minutes.
Add the garlic and garam masala. Stirring, cook for another 1 to 2 minutes. Add the zucchini, seitan, and tomato and cook for 1 to 2 minutes.
Add the remaining ingredients, except cilantro and simmer over medium heat for 10 minutes until sauce begins to thicken slightly. Taste and add Tabasco if desired. Stir in cilantro.
