Shrimp and peach salad - country cooking

Ingredients

Quantity Ingredient
1 pounds Jumbo shrimp, cooked, shelled, deveined, and chilled
2 tablespoons Fresh lemon juice
1 tablespoon Cilantro leaves, finely chopped
½ small Head green-leaf lettuce
2 larges Peaches, peeled, halved, pitted, and sliced
2 smalls Cucumbers, peeled, and thinly sliced
½ medium Sweet red pepper, chopped
Balsamic vinegar or prepared salad dressing

Directions

1. In medium-size bowl, combine shrimp, lemon juice, and cilantro; cover and refrigerate 30 minutes.

2. Just before serving, divide lettuce among 4 chilled plates. Arrange marinated shrimp, peaches, cucumbers, and red pepper on lettuce. Pass balsamic vinegar or prepared salad dressing to serve on salad.
