Shrimp bruschetta

6 | ounces | (about 1 C.) diced cooked shrimp |
1 | cup | Shredded lo-fat mozzarella cheese |
¾ | cup | Chopped plum tomatoes; (about 2 med.) |
¾ | cup | Chopped fresh spinach |
¼ | cup | Chopped scallions |
1 | teaspoon | Crushed fresh garlic |
1 | teaspoon | Dried oregano |
1 | Long; thin loaf French bread,about 24x2x1 in. |
Directions
Combine shrimp, cheese, tomatoes, spinach, scallions, garlic and oregano in a medium bowl, stir to mix well and set aside. Slice the bread into 48 (½ in.) slices. Arrange slices on a baking sheet and bake at 300 for 12-15 min. or til crisp and dry. Spread each slice with 1 T. of the shrimp mixture. Increase the oven temp. to 400 and return the appetizers to the oven for 5 min., or just til the cheese is melted. Arrange on a serving platter and serve hot.
