Simmered spareribs with sherry

Ingredients

2 | pounds | Pork spareribs |
2 | cups | Water |
4 | tablespoons | Soy sauce |
1 | teaspoon | Salt |
2 | tablespoons | Sherry |
1 | teaspoon | Sugar |
Directions
1. Cut ribs apart; then with a cleaver, chop each, bone and all, in 1-inch sections.
2. Place in a heavy pan with cold water, soy sauce and salt. Bring to a boil, then simmer, covered, 1 hour. Drain well.
3. Heat a skillet and add ribs, sherry and sugar. Stir-fry in over high heat until liquid evaporates. Serve hot.
