Directions
If you don't want to take the time to make your own mix, you can use the microwave cake mixes. Select the refill types since you do not need the pan. Many of the mixes today do not require any added egg so are readily prepared with just the addition of water.
Starting with a regular-sized microwave mix, rather than a single-size variety, will cut your costs by about half. DIRECTIONS: Measure ½ cup mix from favorite microwave cake mix into 10 oz. baking dish or dessert dish.
Stir in 3 Tablespoons water with fork until smooth. MICROWAVE (HIGH), uncovered, 1 to 1½ minutes or until now longer doughy, rotating dish once. If mix comes with frosting, use about ¼ of the frosting for each cake. YIELD: About 2 Servings. Source: MW Times. Nutrition info: Use information on mix package. NOTE: If mix calls for egg, add 1 Tablespoon egg with water. Entire package of mix can be prepared as directed and then divided among 4 baking dishes. Cover and freeze the extra batter in the dishes. Then, just uncover and microwave 1 ¼ to 1 ¾ minutes to cook the frozen batter.
