Smoked chicken sandwich w/pepper slaw

½ | cup | Red Pepper, seeded and sliced thin (1/2 pepper) |
1 | tablespoon | Mayonnaise |
1 | teaspoon | Mustard |
Salt and Pepper (opt) | ||
8 | slices | Seeded Rye Bread |
1½ | cup | Shredded Smoked Chicken |
Directions
Combine the cabbage, red pepper, mayonnaise, and mustard in a bowl and let the mixture stand for approximately 30 minutes. Taste for seasoning and add salt and pepper to taste, if necessary.
Spread the cabbage mixture on half of the bread slices. Add a thick layer of shredded chicken to each, and top with a second slice of bread.
