Smothered pork chops w/onions & thyme

1 | tablespoon | Vegetable Oil |
1 | large | Onion, Sliced |
1 | teaspoon | Dried thyme, crumbled |
½ | cup | Canned chicken broth |
Directions
Season the pork with salt and pepper. Heat the oil in a medium skillet over high heat. Cook the pork until brown (about 3 minutes per side). Transfer to the plate. Add the onion to the skillet.
Reduce heat to medium. Cover. Cook, stirring occasionally, until soft and beginning to brown (about 7 minutes). Stir in the thyme. Cook 30 seconds. Return the pork and any juices which have drained from it to the skillet. Spoon the onions over. Add the broth. Bring to a boil.
Reduce heat to low. Cover. Simmer until pork is cooked through (about 10 minutes). Transfer pork and onions to serving plates. Simmer sauce until slightly reduced (about 2 minutes). Spoon over pork. From: Joel Ehrlich Submitted By JIM WELLER On 07-25-95
