Snacks-to-go: peanut butter waffles

1¼ | cup | Whole wheat flour |
2 | teaspoons | Baking powder |
¼ | teaspoon | Salt |
½ | cup | Smooth peanut butter |
¼ | cup | Liquid honey |
2 | Eggs | |
1¼ | cup | Milk |
1 | teaspoon | Vanilla |
Directions
Good on their own, these can be served with fresh fruit or spread with jam. Wrap individually in plastic wrap and freeze to reheat as need in a toaster. Recipe can be used to make pancakes, also.
In large bowl, stir together whole wheat flour, baking powder and salt. in separate bowl, whick peanut butter with honey; whisk in eggs, then milk and vanilla. Pour over dry ingredients, stirring just until combined.
in ⅓ to ½-cup batches or according to manufacturer's instructions, pour batter onto hot greased waffle iron; cook for 3-4 minutes or until golden.
Tip: substitute almond butter for peanut butter - but reduce milk to 1 cup and add up to ¼ cup more milk if necessary to make pourable batter.
Per Waffle: about 155 calories, 6 g protein, 7 g fat, 19 g carbohydrate
