Sogliole alla genovese (sole genoa style)

Ingredients

Quantity Ingredient
pounds Fillet of sole
5 tablespoons Olive oil
1 cup Tomato juice
¾ cup Bread crumbs
1 tablespoon Oregano
2 Sprigs parsley, minced
Salt & pepper
½ Lemon , Juice of

Directions

1. Clean and wash fish. Grease a baking dish with oil and lay fillets in the bottom of a dish. Pour liquid around them. Combine remaining ingredients except lemon juice, and sprinkle over fish.

2. Bake in a moderate oven (350F) until fish flakes easily, about 15 minutes. Do not overcook. Sprinkle fillets with lemon juice and serve immediately.
