Ingredients

Quantity Ingredient
9 cups Chicken stock
2 cups Chopped fresh spinach
6 larges Mushrooms, thinlysliced
1 medium Onion, thinly sliced
1 tablespoon Miso or low sodium soy sauce
¼ teaspoon Fresh lemon juiuce
1 Egg white

Directions

Bring stock to a boil. Add remaining ingredients except egg white.

reduce heat and simmer 15 minutes. Beat egg white slightly and drop in ribbons into stock. Simmer 3 minutes. Serve hot. Makes 10 servings.

Variation: Eliminate egg white and add 1 poached shredded chicken breast.
