Spanakopites

Ingredients

Quantity Ingredient
4 ounces Filo dough
2 ounces Sweet butter
2 larges Eggs, beaten
1 ounce Olive oil
1 ounce Scallions
4 ounces Frozen spinach, chopped
1 ounce Chopped parsley
½ ounce Dill
2 ounces Feta cheese
Salt and pepper, to taste

Directions

Saute spinach, scallions, parsley and dill in butter until scallions are wilted. Add olive oil. Season to taste, remove from heat and cool. Cut filo dough into 16 2" strips. Brush 2 strips with beaten eggs. Place 1 teaspoon of spinach at bottom of dough, fold into triangle and continue to roll end over until you come to end. Brush with egg and fold over. Repeat with remaining dough and spinach. Heat in preheated 350 F oven about 12-15 minutes.
