Ingredients

1 tablespoon Olive oil
1 cup Red onion -- sliced
10 ounces Fresh spinach
2 teaspoons Fresh mint -- or
1 tablespoon Parsley -- minced and
½ teaspoon Dried mint
¼ teaspoon Salt
¼ teaspoon Pepper
¼ cup Marinara sauce
1 12\" pizza crust
1 cup Feta cheese -- crumbled

Directions

Preheat oven to 450~. Heat oil and add onion and cook until just tender, about 4 minutes. Add spinach; cover and cook until liquid is evaporated, 2 minutes. Remove from heat and stir in mint (or parsley combined with mint), salt and pepper. Spread sauce over crust. Spread evenly with spinach mixture. Sprinkle with feta. Bake 10 minutes.
