Spicy prawns with tomato

400 | grams | Frozen large prawns, defrosted & drained |
1 | teaspoon | Sea salt |
½ | teaspoon | Black peppercorns, crushed |
½ | teaspoon | Sugar |
2 | teaspoons | Grated root ginger |
2 | Cloves garlic, finely chopped | |
2 | tablespoons | Finely chopped spring onions |
1 | Birds (1-2) eye chillies, deseeded fine choppd | |
213 | grams | Can chopped tomatoes |
1 | tablespoon | Cornflour |
Directions
1. Heat half the oil in a wok. Stir fry the prawns for 1 minute. Remove from the pan.
2. Add the remaining oil, the salt, pepper and sugar and stir for 15 seconds. Add the ginger, garlic, spring onions and chillies and stir fry for a further 15 secs.
3. Add the tomatoes, then fill the can with water and add to the pan, stirring the cornflour into the last 2 tbsp until smooth. Stir into the pan for 5 minutes.
4. Stir in the prawns and simmer for 2-3 minutes. Serve with Basmati rice.
