Spinach ham and pasta salad^

SALAD
1 pack (8oz, 5 1/2c) uncooked
Spinach noodles
4 ounces Cooked xtra lean ham slices,
Cut in 2 x 1/4\" strips
1 small Red onion, thinly sliced,
Separated into rings
4 cups Fresh spinach, cut into
3 X1/4\" strips
4 ounces Lowfat part skim mozzarella
Cheese slices, cut in 2x1/4\"

DRESSING
¼ cup White wine vinegar
1 tablespoon Lemon juice
1 tablespoon Olive oil
1 tablespoon Water
¼ cup Chopped fresh basil
¼ teaspoon Salt
¼ teaspoon Pepper
2 cloves Garlic, minced

Directions

Cook noodles to desired doneness as directed on package. drain; rinse with cold water. Meanwhile, in jar with tight fitting lid, combine all dressing ingredients; shake well.

In large bowl, combine cooked noodles and remaining salad ingredients; toss lightly. Pour dressing over salad mixture; toss lightly to coat. 6 (1½ cup) servings.

Per serving: 260 calories, 16 g protein, 30 g carbohydrate, 4 g fiber, 8 g fat, 55 mg cholesterol, 520 mg sodium, 460 mg potassium, 2 starch and 2 lean meat exchanges.
