Spinach sprout salad

Ingredients

Quantity Ingredient
2 cups Lettuce, chopped
2 cups Spinach, chopped
2 cups Alfalfa sprouts
1 cup Assorted sprouts *1
1 cup Cucumber, peeled, cubed
1 medium Tomato, sliced
1 cup Arugula, chopped (optional)
2 tablespoons Olive oil
2 teaspoons Lemon juice, fresh
2 teaspoons Soy sauce -OR-
½ teaspoon Dijon mustard

Directions

*1 lentil, mung bean, aduki, radish, pea, red clover or wheat berry.

Combine vegetables and sprouts in large bowl. Add oil and toss. Add lemon juice and soy sauce or mustard and toss again.
