Spoonbread (cornmeal)

Ingredients

1 | cup | Cornmeal |
1 | teaspoon | Salt |
3 | cups | Water |
1 | cup | Milk |
2 | Eggs | |
Bacon Fat or Butter |
Directions
Boil water and slowly add cornmeal. Cook 5 minutes or until very thick.
Cool til "warm". Beat in eggs one at a time. Add salt and milk.
Preheat oven to 350 and preheat wrought iron skillet. Melt a couple of tablespoons of bacon fat in pan, add cornmeal mixture and return immediately to oven. Bake at 350 for 45 minutes or til knife comes out clean.
