Steamer pineapple tapioca pudding

Ingredients

Quantity Ingredient
1 each Egg; separated
2 cups Milk
3 tablespoons Quick cooking tapioca
5 tablespoons Sugar; divided
¼ teaspoon Salt
1 teaspoon Vanilla
8 ounces Crushed pineapple thoroughly drained

Directions

In rice bowl, blend egg yolk, milk, tapioca, 3 tablespoons of the sugar and salt. Let stand 5 to 10 minutes.

Meanwhile, in small bowl, beat egg white until foamy; gradually add remaining 2 tablespoons sugar. Continue beating until soft peaks form; set aside.

Place rice bowl in steamer. Add 1-½ cups water to reservoir, cover and steam 26 to 30 minutes, stirring every 5 to 10 minutes.

Stir in vanilla. Fold beaten egg white and pineapple into steamed tapioca mixture. Let stand 10 to 15 minutes. Serve warm or cold.
