Stuffed squid

2 tablespoons Bread crumbs
2 pounds Squid
½ cup Olive oil
½ teaspoon Salt
1 Clove garlic
½ teaspoon Pepper
2 Sprigs parsley; minced
1 tablespoon Uncooked rice
1 Very small tomato; minced
1 tablespoon Olive oil
1 Canned anchovy filet; choppe

Directions

~Peel squid and remove insides, keeping body whole. ~Cut off tentacles and heads, remove eyes and put heads and tentacles through meat chopper. ~Add parsley, salt, pepper, rice, tomato, anchovy and 1 Tablespoon oil and mix well. ~Stuff squid bodies with this mixture, place in oiled baking dish, sprinkle with bread crumbs and pour oil over all. ~Bake in hot oven 400 35 minutes.
