Stuffed zucchini-courgettes farcie

Ingredients

2 | Zucchini; split lengthwise | |
2 | ounces | Rice; pre-cooked |
2 | tablespoons | Chicken bouillon |
1 | teaspoon | Parsley; minced |
Salt & pepper | ||
3½ | ounce | Crabmeat; flaked |
Paprika | ||
Parsley for garnish |
Directions
Scrape the flesh out of the zucchini, leaving a shell no more than ½ inch thick. Mash the pulp & put it in a casserole with the rice, the bouillon, parsley, salt & pepper. Microwave at HIGH 4-6 minutes until the rice is tender & liquid is absorbed. Add the crabmeat and mix well. Fill zucchini shells with the mixture. Place on a plate & sprinkle with paprika. Cover with waxed paper and cook 4-5 minutes on HIGH, turning halfway. Cook just until zucchini are tender. Let stand, covered, 2-3 minutes. Garnish with parsley before serving.
