Summer pasta sauce

8 | Plum tomatoes | |
1 | pounds | Brie (rind removed) |
1 | cup | Fresh basil |
4 | Cloves garlic minced | |
1 | cup | EX virgin olive oil |
½ | cup | Kamalta olives |
Salt & pepper to taste | ||
1½ | pounds | Linguine |
Freshly grated Parmesan |
Directions
Prepare ahead of time: In large bowl, combine tomatoes, chopped brie, basil, garlic, olive oil, black olives and salt and pepper. Cover and set aside at room temperature for 1 - 2 hours.
When you are ready to serve prepare pasta al dente, drain and toss with the tomato sauce. The heat of the pasta will bring out the flavors and further melt the brie to make a rich and creamy sauce.
