Surprise ham croquettes

Ingredients

Quantity Ingredient
1 tablespoon Shortening; melted
2 cups Mashed potatoes
3 Egg yolks
Cayenne
1 cup Chopped cooked ham
Bread crumbs; and egg

Directions

Mix potatoes, shortening, 2 egg yolks and cayenne. Beat until smooth, then cool. Mix ham with remaining egg yolk and cook until mixture thickens.

Chill. Take a large tablespoon of the potatoe mixture, make a hole in the center, put a large teaspoon of the chopped ham inside, close the hole and form a ball. Roll in bread crumbs, then in egg, again in bread crumbs, and fry in hot deep fat for about 5 minutes. Drain. Makes 8.
