Smoked ham and spinach surprise

Ingredients

12 smalls Onions; peeled
2 tablespoons Vegetable oil
1 250 g pack ready to each spinach
15 grams Butter; ( 1/2oz)
Salt and freshly ground black pepper
100 millilitres Balsamic vinegar; (3 1/2fl oz)
1 100 g pack beech smoked wafer thin ham
125 grams Mature Cheddar cheese; grated (4oz)

Directions

Preheat the oven to 160 C, 325 F, Gas Mark 3.

Place the onions on a baking tray, drizzle over the oil and cover with foil.

Slow roast for 1½-2 hours.

Place the spinach in a saucepan with the butter and seasonings and cook for 3-5 minutes.

Caramelise the balsamic vinegar by heating it over a low heat until it reduces by half.

To assemble, place the spinach on a serving place, put the smoked ham on top, then the roasted onions and top with the grated cheese.

Drizzle the balsamic vinegar around the plate.
