Smoked ham and spinach surprise

12 | smalls | Onions; peeled |
2 | tablespoons | Vegetable oil |
1 | 250 g pack ready to each spinach | |
15 | grams | Butter; ( 1/2oz) |
Salt and freshly ground black pepper | ||
100 | millilitres | Balsamic vinegar; (3 1/2fl oz) |
1 | 100 g pack beech smoked wafer thin ham | |
125 | grams | Mature Cheddar cheese; grated (4oz) |
Directions
Preheat the oven to 160 C, 325 F, Gas Mark 3.
Place the onions on a baking tray, drizzle over the oil and cover with foil.
Slow roast for 1½-2 hours.
Place the spinach in a saucepan with the butter and seasonings and cook for 3-5 minutes.
Caramelise the balsamic vinegar by heating it over a low heat until it reduces by half.
To assemble, place the spinach on a serving place, put the smoked ham on top, then the roasted onions and top with the grated cheese.
Drizzle the balsamic vinegar around the plate.
