Sweet date and coconut cookies

Ingredients

Quantity Ingredient
Safflower oil -- for coating
Pan
¾ cup Honey
1 Egg
1 Egg white
1 cup Dates -- chopped & pitted
¼ cup Grated fresh coconut
½ cup Chopped almonds
½ cup Raisins
½ cup Whole-wheat pastry or
Unbleached white flour
½ teaspoon Baking powder

Directions

1. Preheat oven to 350 degrees F. Lightly oil an 8-inch-square baking pan.

2. In a large bowl combine honey, egg, egg white, dates, coconut, almonds, and raisins. In separate bowl sift together flour and baking powder.

Combine contents of two bowls, mix well, and pour into prepared pan. Bake 30 minutes.

3. Let cool, then slice.

Makes about 16 squares.
