Sweet kugel (low fat)

Ingredients

Quantity Ingredient
1 cup 1% low fat cottage cheese
4 8 ounce cartons egg substitute
8 ounces Low fat sour cream
¾ cup Raisins
½ cup Sugar
2 tablespoons Reduced- calorie stick margarine; melted
1 teaspoon Cinnamon
¼ teaspoon Salt
16 Ounce can unsweetened sliced peaches; drained
; coarsely chopped
8 ounces Cooked egg noodles; (about 12 oz dry)
Vegetable cooking spray
cup Coarsely crushed cornflakes

Directions

OVEN: 350 Coat a 13 x 9-inch baking dish with vegetable cooking spray.

Combine first 9 ingredients in a large bowl; stir well.

Add noodles, toss gently to coat.

Sprinkle cornflakes over noodle mixture; cover and bake for 30 minutes.

Uncover and bake an additional 10 minutes.
