Sweet spud with corn salsa

Quantity Ingredient
1 medium Sweet potato
¼ cup Frozen corn; thawed
1 Pickled jalapeno; chopped
1 tablespoon Chopped onion
1 teaspoon Chopped garlic
¼ teaspoon Cumin
Lime juice to taste

Directions

Bake potato in the microwave until done. Combine remaining ingredients in a small bowl. Split potato in half, mash a bit, and fill with the salsa.
