Tandoori turkey tikas

Ingredients

cup Plain low-fat yogurt
2 tablespoons Paprika
2 tablespoons Curry powder
1 teaspoon Freshly ground pepper
1 teaspoon White vinegar
¾ teaspoon Peeled, grated ginger root
¼ teaspoon Salt
2 Garlic cloves, crushed
1 pounds Skinned, boned turkey breast, cut into 24 bite-sized pieces
2 Pita breads, cut in half(6\")
½ cup Plain low-fat yogurt

Directions

In a sealable plastic bag, combine ⅔ cup yogurt, paprika, curry powder, pepper, vinegar, ginger root, salt and garlic. Stir turkey into mixture. Marinate in refrigerator overnight.

Thread six turkey pieces onto each of four 8" bamboo skewers; discard marinade. Place skewers in a 2-quart rectangular glass dish and cover with wax paper. (NOTE: Do not use a plastic dish because spices will stain it.) Rearranging skewers midway through cooking, microwave on high 6-8 minutes, or until turkey is no longer pink.

Remove turkey from skewers and fill each pita half with 6 turkey pieces. Drizzle turkey in pita with 2 tablespoons yogurt each. If desired, garnish with fresh mint leaves.
