Tex mex catfish fajitas

Directions

If you think fajitas can only be stuffed with meat, you'll change your mind once you've tried this scrumptious version. If catfish is unavailable, substitute another milk flavored white fish, such as cod 1-¼ lb catfish, fillets ¼ cup lime juice (39 min left), (H)elp, More? 1 clove garlic, minced pinch EACH hot pepper flakes and oregano 8 8inch flour tortillas ½ cup light sour cream of plain yogurt hot salsa fresh coriander sprigs Pat fish dry. Place in nonmetallic dish. In small bowl, stir together lime juice, garlic, hot pepper flakes and oregano. Pour over fish. Refrigerate, covered, 1 hour, turning occasionally. Wrap tortillas in foil, place in bottom part of oven while preheating broiler and broiling fish. On nonstick or lightly oiled baking sheet, arrange fish in single layer. Broil 4 inches from hot broiler 5-7 minutes, or until fish flakes easily with fork, turning only thicker pieces. Divide fish evenly among tortillas, arrangeing fish down centre of each. Top with sour cream and salsa. Fold over bottom and 2 sides to enclose filling. Garnish with coriander sprigs. (39 min left), (H)elp, More?
