Tiger nut milk (horchata de chufas)

Ingredients

Quantity Ingredient
Tiger Nuts (available from health food shops)
500 millilitres Hot Water
½ Lemon
Sugar to taste

Directions

Soak the nuts overnight. Rinse them well and put them through a blender with the hot water until the mixture is hot and milky. Press the moisture from the nuts in a double muslim or through a very fine sieve. Sweeten and add the zest of half a lemon. Cover and chill thoroughly before serving.
