Todd english's raspberry sauce

Ingredients

Quantity Ingredient
24 ounces Raspberries, frozen unsweetened; thawed
½ cup Sugar
1 teaspoon Lemon juice, fresh
¼ cup Water

Directions

In a heavy saucepan, simmer all ingredients, stirring, until sugar is dissolved. Cool mixture. In a blender, puree mixture and strain through fine sieve into a bowl, pressing on solids.

Sauce may be made one day ahead, chilled, and covered.
