Tomato and avocado pinwheel salad

4 Tomatoes, cut into wedges
2 Avocadoes, peeled & pitted, cut into thin wedges
2 tablespoons Lime juice
½ cup Balsamic vinegar
1 Garlic clove, minced
3 tablespoons Onion, grated
1 tablespoon Sweetener
¼ cup Olive oil

Directions

SWEET VINAIGRETTE

Sprinkle tomato & avocado wedges with lime juice. On a serving platter, arrange laternate slices of tomato & aovcado in a pinwheel fashion.

VINAIGRETTE: Whisk together vinegar, garlic, salt, onion & sweetener.

Gradually pour in the oil & whisk to blend. Pour this vinaigrette over the wedges. Serve.
