Tomato with pesto

Ingredients

Quantity Ingredient
1 Garlic clove
2 tablespoons Pine nuts
cup Basil leaves, packed
3 tablespoons Parmesan cheese
Salt & pepper to taste
3 larges Tomatoes sliced 1/2\" thick
cup Olive oil

Directions

In a blender or food processor, finely chop garlic, pine nuts, basil, olive oil, cheese, salt and pepper. Drizzle tomato slices with olive oil and dollop each slice with 2 tsp of pesto, and serve remaining pesto on side.

Tomato Pesto Pasta Salad

Prepare pesto as above. Toss with 2 diced tomatoes, 4 thinly sliced scallions, 20 sliced pitted black olives and 12 oz cooked macaroni.
