Tomato-vegt sauce

Ingredients

Quantity Ingredient
½ large Onion; chopped
½ Green pepper; chopped
Cooking spray
1 cup Diced yellow squash
1 can (14oz) diced tomatoes or 2 cups fresh tomatoes; diced
2 cans Tomato sauce
1 medium Tomato; chopped
1 teaspoon Italian spice
6 Fresh basil leaves; chopped

Directions

Coat a skillet lightly with cooking spray and saute onion and pepper. Add reminder of ingredients and simmer for as long as possible.

Serve over Lentil Rice Burgers or potatoes, or pasta, or whatever you wish.
