Tuna matzoh balls

¼ | cup | Fine chopped parsley or chives (optional) |
1 | cup | Matzoh meal |
1 | pinch | Pepper |

Date: Mon, 25 Mar 96 13:05:40 EST submitted by: paradise@... (Yehuda Paradise, Ramat Gan, Israel) Don't laugh: I know this sounds crazy, but actually, it tastes great! Drain tuna, and if you are finicky, bone it; keep the brine! Combine tuna, egg, parsley, pepper and nearly all of the matzoh meal, mix well. Form into 1 inch balls and roll in the remaining matzoh meal. Boil at least 2 qts water, add brine and introduce balls with plenty of "elbow room", so they won't jostle each other (you won't be able to cook them all at one go). Don't turn balls over: they'll turn of their own account when half done. Cooking time: About 6 mins.
