Ingredients

1 | pounds | Cooked turkey; shredded |
3 | tablespoons | Fresh basil; chopped |
¼ | cup | Parmesan cheese |
3 | tablespoons | Lemon juice |
½ | cup | Olive oil |
3 | cups | Long grain rice; cooked |
1 | cup | Wild rice; cooked |
1 | Green bell pepper; chopped | |
1 | Red bell pepper; chopped | |
½ | cup | Red onion; chopped |
¾ | cup | Black olive; sliced |
Salt and pepper |
Directions
In blender, combine basil, Parmesan and lemon juice. With motor running, slowly add olive oil to make a creamy dressing. Combine remaining ingredients in a bowl. Add dressing and toss gently with a fork to blend.
