Directions

Skim off and discard fat. Pour liquid back into a 3 quart pot. Add turkey meat, rice, parsley, salt, and pepper. Cover and let simmer for 5 minutes.

Serve about 1-½ cups hot Gumbo per person. Makes 4 servings, yields 6 cups. Variation: Instead of rice, use 4 ounces vermicelli.
