Uppu elimachangai (salty lemon pickle)

6 Lemons
12 Green chiles
5 cm. ginger; peeled & chopped
Salt; to taste

Directions

Cut lemons into 2 cm. pieces. Chop chillies fine. Mix together lemons, ginger, chilies and salt well in a pickle jar. Allow to stand for about 3 days and then use. Refrigerate. From: Southern Delights (Recipes To Remember From Palakkad) by Parwathy Akhileswaran
