Ingredients

300 millilitres Fromage Frais
2 Vanilla Pods
2 decilitres Slightly Whipped Double Cream
300 grams Selection of Mixed Summer Berries
100 grams Slightly sweetened puree of Berries
4 Sprigs Fresh Mint

Directions

1. Place the fromage frais into a mixing bowl. Add the vanilla seeds, double cream and icing sugar to taste.

2. Place into small darriole moulds (which have been lined with cling film) and refrigerate for 1 hour.

3. Puree 100g of summer fruits with 20g icing sugar, and pass through a fine sieve. Place the whole fruits into a bowl and add the puree.

4. Turn out the fromage frais into the centre of a plate. Place the berries around and garnish with mint.
