Veal and spinach ravioli stuffing

Ingredients

Quantity Ingredient
1 cup Veal, cooked, minced
2 tablespoons Shallots, finely chopped
1 teaspoon Sage
¼ teaspoon Mace or nutmeg
½ cup Spinach, chopped
½ teaspoon Black pepper
1 tablespoon Dry sherry
¼ cup Parmesan, grated

Directions

Place all ingredients in a large mixing bowl and combine thoroughly.

Fill ravioli with mixture.
