Vegetable horseradish casserole

Ingredients

2 cups Broccoli; flowerets
cup Cauliflower; flowerets
cup Carrots; thinly sliced
½ cup Mayonaise
2 tablespoons Onions; finely chopped
4 teaspoons Horseradish
¼ teaspoon Lemon pepper seasoning
¼ cup Bread crumbs; seasoned dry
1 tablespoon Margarine; melted

Directions

In large mixing bowl combine broccoli, cauliflower and carrots. For horseradish mixture, in a small mixing bowl combine mayonaise, onion, horseradish and lemon pepper seasoning. Stir horseradish mixture into vegetables. Tear off 36 x 18" piece of heavy foil. Fold in half.

Spray center of foil with Pam. Place mixture in center of foil.

Combine bread crumbs and margarine; sprinkle over the vegetables.

Bring up two opposite edges fo foil and seal with a double fold. Fold remaining ends to completely enclose the vegetables, leaving space for steam to build. Preheat gas grill.
