Vegetable omelette

½ | small | Chopped onion |
10 | grams | Butter |
10 | millilitres | Oil |
100 | grams | Frozen vegetable mix; cooked to microwave |

Directions
TO MAKE 1 OMELETTE
Fry the onion in oil and butter without colour. Add the cooked vegetables, top up with the eggs, season and let set in the pan.
When fully cooked, fold in half and serve with mashed potatoes and garden peas.
