2 | cups | Flour |
1 | tablespoon | Baking powder |
½ | teaspoon | Salt |
2 | teaspoons | Sugar |
1¾ | cup | Sour milk |
2 | Eggs, separated | |
⅓ | cup | Melted shortening |
Directions
Sift together the flour, baking powder, salt and sugar. Beat the egg yolks and add the milk and shortening. Stir this into the dry ingredients and beat well. Beat egg whites until stiff. Fold into batter. Pour into a hot, greased waffle iron and bake until browned.
Serve hot with butter and syrup. Try some fruit on top. Many of the recipes in this collection did not contain amounts or oven temperatures. I have typed them in as they appear in the book, typos and all.
