Warm squash slaw - country living

Ingredients

1 tablespoon Olive oil
½ cup Chopped green onions
1 Small (1 lb) cabbage, coarsely shredded
1 (1 1/4-lbs) butternut squash, coarsely shredded
¼ cup Cider vinegar
2 tablespoons Firmly packed light-brown sugar
¾ teaspoon Salt
¼ teaspoon Ground black pepper
¼ teaspoon Caraway seeds

Directions

1. In large skillet, heat oil; add green onions and saute until wilted. Add cabbage; stir-fry 5 minutes or until it is slightly tender.

2. Stir in squash, vinegar, brown sugar, salt, pepper, and caraway seeds. Cover and cook over low heat, stirring occasionally, 5 minutes or until cabbage is wilted. Serve slaw immediately.
