½ | cup | Chopped green onions |
1 | Small (1 lb) cabbage, coarsely shredded | |
1 | (1 1/4-lbs) butternut squash, coarsely shredded | |
¼ | cup | Cider vinegar |
2 | tablespoons | Firmly packed light-brown sugar |
¾ | teaspoon | Salt |
¼ | teaspoon | Ground black pepper |
¼ | teaspoon | Caraway seeds |
Directions
1. In large skillet, heat oil; add green onions and saute until wilted. Add cabbage; stir-fry 5 minutes or until it is slightly tender.
2. Stir in squash, vinegar, brown sugar, salt, pepper, and caraway seeds. Cover and cook over low heat, stirring occasionally, 5 minutes or until cabbage is wilted. Serve slaw immediately.
