250 eaches Marsala
300 eaches Mascarpone
½ cup Crushed amaretti biscuits, toasted

Whisk egg yolks and sugar in a heatproof bowl over simmering water until thick and pale. Gradually add Masala, whisking constantly for about 15 minutes. Remove from heat and cool. Refrigerate until well chilled and slightly firm. Gently fold in mascarpone and serve in glasses, sprinkled with amaretti biscuits. Bon Appetit, Exec. Chef Magnus Johansson
