1 | teaspoon | Lemon zest |
1 | tablespoon | Lemon juice |
½ | teaspoon | Coconut or almond extract |
1 | can | (8 oz.) pineapple tidbits in juice; drained |
1 | cup | Assorted sliced fresh fruit |
¼ | cup | Mini marshmallows or flaked coconut |
Directions
Notes: By Patricia A. Miller, Lehighton. The Times News, PA Make pudding according to package directions in bowl. Stir in lemon zest, lemon juice and coconut extract. Reserve ¼ cup pudding for topping. Spoon remaining pudding equally into dessert bowls. Combine remaining ingredients in bowl. Spoon on top of pudding. Top with reserved pudding. Makes 4 servings.
