Apple and matzo kugel

Quantity Ingredient
6 Matzos, broken in pieces
2 Eggs, separated
1 Apple, peeled and diced
1 tablespoon Shortening

Directions

Cover matzos with water then squeeze out as much as possible. Add apple and fat. Beat yolks into mixture, season with salt and sugar to taste. Beat egg whites until stiff, fold in above gently. Pour inot pre-heated, greased casserole. Bake in slow oven (300 F.) about 1 hr. until top has an even brown crust.
