Applesauce fruitcake

1½ | cup | Sweetened applesauce |
½ | cup | Shortening |
1 | cup | Sugar |
1 | pack | (8 ozs.) pitted dates; sliced |
4 | ounces | Chopped pecans |
½ | pounds | Red cherries; halved |
½ | pounds | Green cherries; halved |
2 | cups | Raisins |
2¼ | cup | All-purpose flour |
2 | teaspoons | Baking soda |
1 | tablespoon | Cinnamon |
¼ | teaspoon | Allspice |
½ | teaspoon | Salt |
1 | fruitcake |
Directions
Grease and flour a tube pan and set aside. Combine applesauce, shortening and sugar together in a saucepan. Bring to a boil; boil for 5 minutes, stirring occasionally. Combine fruit and nuts in a large bowl, adding flour, soda, salt and spices and stir together. Fold in cooked mixture until well moistened. Pour into the prepared pan and bake at 275 degrees for 2 hours or until done.
Cool on a wire rack for 10 minutes. Remove from pan and cool completely.
