Baby carrots with mint

Ingredients

4 | cups | Baby carrots |
¼ | cup | Minced fresh mint |
1 | tablespoon | Minced fresh ginger |
Directions
Steam the carrots over boiling water until tender, 3-5 minutes.
Remove from the heat, drain and save 2 tb. of the cooking water.
In a bowl, while the carrots are still hot, toss with the cooking broth, mint, and ginger. Serve immediately.
